In an Italian restaurant the comanda is the order ticket, and the comandiera is where it lands. Ours is digital: the waiter sends the order from the table, the kitchen and the bar each receive their part, and the floor manager follows the whole room.

Stock is never a number typed somewhere: it is the sum of every delivery, count and write-off, each with who and when. The storeroom has its own tablet, and its staff sign in with a PIN that opens only the storeroom.
